Roasted the Old-Fashioned Way:
Even though New Mexico Piņon Coffee Company has won several awards and is
now world-famous, they still roast coffee beans the old-fashioned way: by
hand, in small batches. Of course only the finest medium-roast Arabica beans
are allowed into the old, 1890's Royal #5 roasting machine.
The Royal #5 works with a maximum of just 25 lbs. of coffee beans at a
time. The ancient machine has no gauges or thermometers, so the operator must
constantly monitor the sights and smells of the beans as they roast.
Late in the process, when the roasting beans have just the right smell,
unique flavors are added and allowed to fully saturate the roast with flavor.
The results are easy-drinking coffees that are truly unique to New Mexico!
