Even though New Mexico Piñon Coffee Company has won several awards and is now world-famous, they still roast coffee beans the old-fashioned way: by hand, in small batches. Of course only the finest medium-roast Arabica beans are allowed into the old, 1890's Royal #5 roasting machine.

The Royal #5 works with a maximum of just 25 lbs. of coffee beans at a time. The ancient machine has no gauges or thermometers, so the operator must constantly monitor the sights and smells of the beans as they roast.

Late in the process, when the roasting beans have just the right smell, ground piñon nuts are added and allowed to fully saturate the roast with nutty flavor. The result is this easy-drinking coffee that is truly unique to New Mexico!
