Cheesy Green Chile Meatloaf

Ingredients:
2 oz. tortilla chips
1 bottle Red Chile Roast
1/2 medium onion, diced
2 cloves garlic, minced
4 oz. Santa Fe Ole Roasted Hatch Green Chile
1 large egg
1/2 tsp. chili powder
1/2 tsp. cumin
1 tsp. Mexican oregano
1/4 tsp. salt
1/4 tsp. black pepper
2 lbs. ground chuck
8 oz. block sharp cheddar cheese
1/3 cup ketchup

Directions:
Preheat oven to 350 degrees F. Lightly spray a 9x13 baking dish with cooking spray and set aside
Crush the chips using a small food processor. You will need about 1/3 cup of chips
In a medium bowl, stir the crushed chips and 1/2 cup of the enchilada sauce together, set aside
Add onion, garlic and green chile to the corn chip mixture and set aside
In a large bowl, combine ground chuck, crushed chip and veggie mixture, egg and spices. Mix well
Take about 1/3 of the mixture and form the base layer of the meatloaf in the center of the baking dish
Place the entire block of cheddar cheese on the center and press down slightly
Add the remaining meat mixture to form the meatloaf and cover the cheese.
Be sure to seal the edges together so the cheese doesn't melt out
Make the sauce by combining the remaining red chile sauce with the ketchup.
Pour over the meatloaf and bake in your prepared baking dish about 1 hour or until the internal temp reaches 160 degrees F
Allow to rest 5 minutes before slicing and serving
