Hatch Green Chile and Vegetable Frittata

This Hatch chile frittata make a great breakfast or brunch for a crowd

Ingredients:
8 slices bacon, diced
1/2 cup Santa Fe Seasons Roasted Green Chile, drained
12 cherry tomatoes, halved
1 small bunch spinach, chopped
12 mushrooms, diced
10 eggs, beaten
1 cup cheddar cheese, shredded

Instructions:
Preheat oven to 400
In a cast iron skillet, cook bacon pieces til almost crisp
Add mushrooms and cherry tomatoes, cook on medium heat til soft
Add spinach and green chile and stir to combine, add eggs and top with cheese
Cook on the stovetop on medium heat 1-2 minutes until eggs are set
Transfer to oven and cook another 10 minutes untiil eggs are cooked and fluffy
