Hatch Green Chile Egg Bites

Ingredients:
3/4 cup Bossy Gourmet Flame Roasted Hatch Green Chile
2 green onions, sliced
8 eggs
1/2 cup cottage cheese
1 cup sharp cheddar cheese, shredded
salt and pepper

Directions:
Preheat oven to 300 degrees F and grease a muffin pan.
Place the muffin pan into a larger pan.
In a blender, mix eggs, cheese and cottage cheese. Season with salt and pepper and blend until smooth, about 2 minutes.
Add green chile and green onions to the muffin pan.
Pour egg mixture into muffin pan anout 3/4 full. Carefully pour boiling water around the muffin pan about halfway up.
Bake 25 minutes, until barely set. They should be slightly undone in the center.
Remove pan from oven and let cool about 5 minutes in the water bath.
Serve warm.
