Red Chile Glazed Meatloaf

Ingredients:
red chile glaze:
2 cups Hatch Red Chile Colorado
1/2 cup honey
meatloaf:
nonstick spray
2 Tbsp. canola oil
1 poblano chile, seeded and chopped
1 red onion, finely diced
4 cloves garlic, minced
2 tsp. cumin
2 eggs
salt and pepper
1 lb. ground chuck
1 lb. ground pork
1 1/2 cups finely ground corn chips
1/2 cup fresh cilantro, finely chopped

Directions:
Stir together red chile, and honey in a bowl and set aside
preheat oven to 375 degrees F. Line a baking sheet with parchment paper and spray lightly with nonstick spray
Heat oil in a large saucepan over high heat
Add poblanos and onions and cook until soft, about 4 minutes. Add garlic and cook 1 more minute
Remove from heat and let cool slightly
Whisk eggs with a splash of water in a large bowl
Add ground chuck and pork, the cooked onion mixture, chips and cilantro. Season with salt and pepper
Mix until just combined and transfer to the prepared baking sheet
Form into an oval loaf about 6 by 12 inches. Bake 45 minutes and begin to brush with red chile glaze
Bake, glazing occasionally, until meatloaf reaches an internal temperature of 160 degrees F, about 15 minutes longer
Allow to stand 5 minutes before cutting and serving
