Shrimp and Green Chile Quesadillas

Ingredients:
1 lb. medium shrimp, peeled and deveined
1 Tbsp. olive oil
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
2 cloves garlic,, minced
1 Tbsp. Hatch Red Chile Powder
1/2 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup Santa Fe Ole Roasted Hatch Green Chile 
2 cups Oaxaca cheese, shredded
6-8 medium flour tortillas

Directions:
In a medium bowl, add shrimp and spices. Stir to coat the shrimp well.
Heat oil in a large skillet. Add onion, bell pepper and garlic. Cook 1-2 minutes, until tender. Add shrimp and cook 1-2 minutes, until shrimp turns pink.
Transfer the mixture to a bowl and wipe the skillet clean.
Return the pan to the heat and spray with cooking spray.
Place a tortilla in the pan and sprinkle cheese on one side of the tortilla.
Spoon 5-6 shrimp onto the tortilla and top with about 1 tablespoon of green chile and a bit more cheese.
Fold tortilla in half. Cook 2-3 minutes on each side, until golden and cheese is melted.
Repeat with remaining tortillas and serve hot with sour cream and guacamole.
