Spaghetti with Garlic and Green Chile Olive Oil

This quick and easy weeknight meal comes together in minutes

Ingredients:
1 lb. spaghetti
1/2 cup New Mexico Green Chile Olive Oil
4-5 garlic clives, finely sliced
1 tsp. chile flakes
1/4 cup parsley, chopped
1/4 cup parmesan cheese, grated

Directions:
Bring a pot of salted water to a boil, cook spaghetti til al dente
While the spaghetti is cooking, make the sauce
Heat the green chile olive oil gently in a frying pan, add garlic and chile flakes
Cook gently for a few minutes, until garlic is pale gold, which will be enough time to infuse the oil
Stir in chopped parsley
Drain spaghetti, reserve 1/2 cup of pasta water
Add spaghetti to the pan, stir well to coat with the oil, add some of the pasta water
Cook on medium heat about 1 minute, stirring constantly
Sprinkle with additional chopped parsley and parmesan and serve
