Steak and Hatch Green Chile Nachos

These spicy beef nachos make it easy to feed a crowd

Ingredients:

2 lbs. flank steak
1 jar Santa Fe Seasons Roasted Hatch Green Chile, drained
2 Tbsp. fresh lime juice
2 garlic cloves
1 tsp. ground cumin
1 bunch cilantro
2 Tbsp. Santa Fe Seasons Chile Blend Grill Rub and Seasoning
2 Tbsp. olive oil
1 bag Lil' Kristi's Tortilla Chips
8 oz cheddar cheese, shredded
8 oz Monterey Jack cheese, shredded
1 small red onion, thinly sliced
radishes, thinly sliced
lime wedges

Directions:
Add green chile, lime juice, garlic, cumin and 1/2 bunch of cilantro to food processor.
Pulse to combine
Set grill for direct cooking on high heat
Season flank steak with Chile Blend Rub and salt to taste
Rub with olive oil and grill to medium rare/medium
Rest 5 minutes and roughly chop
Layer chips, chile mixture, cheeses and onions on a baking sheet lined with foil
Bake until cheese is melted, about 8-10 minutes
Garnish with radishes, cilantro and lime wedges
